Get this for one of those just in case things, it's open-source therefore free. You might never use it but it's always there for if you need it, I have it for Ubuntu and I only use it when I can't be assed re-booting in the Vista or 7.

DockLibrary - You can change colour and style of your dock in leopard
Front Row - It's like a media center for your mac
AppZapper - Delete your Apps
Audio Hajack Pro - alow you to stream/record music from ex. spotify with the same quality
Flip4MAc - alow you to play WMV files
VLC - Of course!
MSN - Of Course!
utorrent - The best bittorrent now on mac!
Mozilla firefox - The best web-browser
iAlertYou - If you're afraid that your mac is going to be stolen this software starts an alarm everytime your portable computer opens. Then your iSight camera take a photo so you can se the thief. then it automaticly sends a e-mail with that picture attached.
Skype - Chat program
NeoOffice - a good and free office
Handbrake or Mac the ripper - both of them good ripping softwares

Don't bother with Wine just use VMWare Fusion.

Got myself a MacBook and this is what I use:

VMWare Fusion - Lets you install Windows on a partition and run it from inside Mac OS X.
Microsoft Word - For word documents obv.
Things - Task management / to do list.
Final Cut - Advanced movie making.
Logic Pro - Advanced sound editing.
VLC Player - Watching videos.
Spotify - Streaming music over the web.
Tweetie - The best Twitter client.
Adium - For MSN but 10x better than Mac Messenger
Photoshop - Image Editing.
Firefox - Internet Browsing.
World of Warcraft - To feed my addiction.
Call of Duty 4 - For when my addiction fails.
smcFanControl - You really need this to control the fan speed in your MacBook (if that's what you're getting) when playing games so you can keep it as cool as possible.

All the stuff you already get bundled with the Mac is also great.

Yeah, everything I use has been mentioned except for programming I use TextWrangler and for torrents I use Transmission. Other then that, good lock with the mac, you'll love it.

I use Transmission also ever since uTorrent randomly stopped working one day.
